Scambled Eggs with Chives

Mushrooms and Baby Spinach

2 teaspoons butter

2 eggs

1 tablespoon fresh chives chopped

80g sliced mushrooms

1 handful of baby spinach

pinch of 

Place handful of baby spinach leaves onto plate

Heat pan to medium heat, add butter and melt

Add mushrooms and stir until cooked

Remove mushrooms and add to plate

Crack eggs into bowl and add chopped chives, whisk until combined

Add mixture to heated pan and stir until cooked

Place on plate

Sprinkle with salt
